Spring is wild garlic season! Finally, the spicy herb is available everywhere again, and gathering it awakens some primal instincts. This recipe shows you how to prepare wild garlic for a delicious pasta dish.

You need these ingredients (2 people):
- 50g fresh wild garlic
- 4 tbsp olive oil
- 20g sunflower seeds
- 20g pine nuts
- 20g Parmesan
- 1 tsp honey
- 1/2 lemon
- 180g tagliatelle pasta
- Salt
- pepper
Everything ready? Then get to the cooking pot!
- Cook pasta according to package instructions.
- Roast the sunflower and pine nuts in a pan. Then set aside and let cool briefly.
- Wash the wild garlic thoroughly, carefully pat dry, and remove the stems. Then roughly chop.
- Grate Parmesan cheese.
- Wash the lemon thoroughly and grate the peel.
- Puree wild garlic , Parmesan, about 3/4 of the seeds, lemon zest, honey, oil and a little salt and pepper to make a pesto.
- Mix the finished pesto with the cooked pasta and enjoy.
Quick tip: You can pour the pesto into a hot-rinsed screw-top jar. Cover the surface with a little olive oil. It will keep in the refrigerator for about 5 days.
