Vanilla ricotta toasts with rhubarb
Sweet, sweeter, summer!!! The taste of heavenly fruit on bread is perfect for breakfast or dinner. Once you try this toast with ricotta, a delicate hint of vanilla, and freshly prepared rhubarb, you'll know what we mean and won't want to stop eating. Our friends at KptnCook have created a masterpiece here. Simple in preparation but more than delicious in taste. We wish you lots of fun and summery happiness while feasting!
You need these ingredients (for you and your favorite person):
- 400g rhubarb
- 20g sugar
- 1 lime
- 320g ricotta
- 4 tsp honey
- 1/2 tsp ground vanilla pod
- 4 tsp butter
- 320g ciabatta bread

Everything ready? Let's go!
- Wash the rhubarb and cut it into pieces.
- Wash the lime thoroughly and grate the peel.
- Then halve the lime and squeeze out the juice.
- Put rhubarb, sugar and lime juice in a pot.
- Bring to a boil and simmer for about 7 minutes until the rhubarb becomes soft and falls apart.
- Mix ricotta, honey and vanilla.
- Cut the bread into slices and toast.
- Spread butter on one side of the slice of bread.
- Add ricotta and rhubarb compote and sprinkle with lime zest.
- Enjoy!
