Sweet, sweeter, summer!!! The taste of heavenly fruit on bread is perfect for breakfast or dinner. Once you try this toast with ricotta, a delicate hint of vanilla, and freshly prepared rhubarb, you'll know what we mean and won't want to stop eating. You need these ingredients (for you and your favorite person):
- 400g rhubarb
- 20g sugar
- 1 lime
- 320g ricotta
- 4 tsp honey
- 1/2 tsp ground vanilla pod
- 4 tsp butter
- 320g ciabatta bread

Everything ready? Let's go!
- Wash the rhubarb and cut it into pieces.
- Wash the lime thoroughly and grate the peel.
- Then halve the lime and squeeze out the juice.
- Put rhubarb, sugar and lime juice in a pot.
- Bring to a boil and simmer for about 7 minutes until the rhubarb becomes soft and falls apart.
- Mix ricotta, honey and vanilla.
- Cut the bread into slices and toast.
- Spread butter on one side of the slice of bread.
- Add ricotta and rhubarb compote and sprinkle with lime zest.
- Enjoy!
